Wilridge Winery 

Vineyards

Klipsun is Washington's equivalent of a Grand Cru vineyard, and Wilridge Winery has been making single vineyard designated Cabernets from Klipsun longer than any other winery.  Recently, Wine and Spirits Magazine named Klipsun one of the 25 greatest vineyards in the world.  The vineyard is located in the heart of the Red Mountain Appellation on a southwest-facing slope overlooking the Yakima River. 

Harvest

The grapes were picked on September 28 at 25.8° brix, .66 TA and 3.50 pH.  The grapes were hand harvested and delivered to the winery in a refrigerated truck.

Winemaking

The Cabernet was hand sorted at the winery, crushed and cold soaked for 24 hours and then fermented on the skins for 14 days.  After gentle pressing, the wine was aged in new French oak barrels.  265 cases were bottled on May 5, 2005.  The wine was bottle aged for an additional two years prior to release.

Winemaker Comments

“The 2006 Cabernet Sauvignon is my thirteenth vintage from Klipsun Vineyards.  Over the years, I have worked to try to tame the tannins in these wines.  For the 2006, we aged the wine for an additional two years in the bottle before it was released to further soften the tannins.  The result is still a big wine — as one expects from Klipsun — but also with a softer side that makes the wine immediately enjoyable with a wide range of rich foods.  Try it with cassoulet or roast wild game." ~ P. Tasting Notes

Dark red in color.  The flavors are thick and rich, with hints of mint on the nose.  A great match for hearty, savory dishes.  The ample tannins should allow the wine to age for many years.
