Washington State Cabernet Sauvignon continues to turn heads for its fruit-driven style. Camaraderie Cabernet Sauvignons have been known for their depth and structured flavors that are strong to berry and cherry elements. Another attribute of our Cabernet's has been complexity borne of using fruit from multiple vineyards and utilizing a variety of oak and fermentation techniques.
This year's bottling includes approximately 15% Merlot, the traditional blending varietal that helps fill the "hole" in the flavor "donut" of the Cabernet Sauvignon. Our Cabernet Sauvignon is sourced from four vineyards: Fred Artz' on Red Mountain; Paul Champoux' at Mercer Ranch; Len Parris' at Chandler Reach, and Butch Milbrandt's at Clifton. This means that four different appellations are used, each with their own strengths of berry, herb, and cherry.
Winemaking techniques again included both small lot punch down and larger vessel pump-overs. Three specialty yeasts were used to accent underlying characteristics of each vineyard. After vinification, the wines were aged for nearly two years in both American and French oak from four coopers. This combination of wine-making techniques contributes to depth and classic balanced proportion.
The 2004 Cabernet Sauvignon is a wine of character, sort of like us at Camaraderie, or at least we're a winery of characters, or so folks have said. We have worked to make a wine that is approachable now for those full flavored meals and a wine with enough structure to age beautifully for the next decade, though you may have difficulty saving it for that long. In reality, a good food wine needs the acid and tannin profile to stand up to hardy fare. If it doesn't, neither the wine nor the longevity do so well.
